BLDC controller with fast response

I have a BLDC controller that I use to control a BLDC motor. The controller has 0 to 5V speed input and the speed of the fan is set based on this speed input voltage. What i have noticed is if I give a step input say 1V to 2V the controller responds only after a delay of 0.3 to 0.5s, that is the speed of the fan only starts to change after 0.3 to 0.5 seconds.

1. Is this a normal delay for a BLDC controller?
2. Are there controllers that can respond quickly within to the input speed signal?
3. I have heard of Gecko drives for Stepper motor are there any similar companies that make drives for BLDC motors?

No, it's not normal, BLDCs respond as quickly as brushed motors. For whatever reason, your controller has a delay. Try another one.

Are there any reputed BLDC controller manufactureres like Gecko, Leadshine are for steppers?

actually texas instrumets makes some pretty good bldc controllers

For fan type motors there are a lot of options - Microchip and Onsemi do several, I think Allegro also.
Delay may be connected with the sensorless feedback algorithms, and that for most fan type applications you don't generally want the speed changing frequently so they may have some internal filtering

I see that most controllers for BLDC motors are microcontroller based and not is this the right way to go? Are there any standalone controllers available for fan type  motors?

Yes, lots (dome use embedded MCUs but the user doesnt havw access) search bldc on digikey and filter by controllers, 3 phase
