Hi. I know they usually create rotating magnetic field by 3 phase current ? But how to do it with 1 phase current ?

Make it DC and then generate multiple sinus signals with equal amplitude and period but differing phases.
Or place a magnet or coil on a turntable.
What do you want to use it for?
