Die cast shielding

Hello

I wanted to understand how such shielding actually works.

Since the aluminum plate are connected to the ground a little bit everywhere on the PCB, how is it possible that it doesn't create ground loops???

There are some ground loops but because of the short physical distance and the thickness of the shield parasitic properties are slim to none.
I.E, there isn't much capacitance, inductance or resistance between any given two points.
