DIY Label Rewinder

I am thinking of building a label rewinder as 'commercial' units seem to be highly overpriced.
I am using a dymo label writer to print labels and was thinking if I was to have an empty spool and a small motor attached this could be achieved quite easily.

Would it be feasible to attach a pot to a 12v dc motor to adjust the speed?
Also if anyone could suggest a suitable motor I would be most grateful.
