Determine read cycle speed of eeprom

I want to dump its memory using programmer also i want to analyze it using oscilloscope/logic analyzer , what is the cycle speed Mhz/Sample rate of the devices in order them to work with this chip?
If it is possible, please explain how you calculated the result.

Look at page 5. This is a NAND flash, read and write cycles are internally timed and may vary in length depending on the age/wear on the blocks.

Which device can dump the contents of the NAND chip? and what its specifications should be?

Anything with enough I/Os... and is fast enough that you won't be annoyed waiting for it to finish reading. Even an Arduino will do it if you don't have anything else.
