I've got hundreds of these, anyone know what fun thing I can do with them apart from "practising" SOT-23 soldering or tossing in the bin

When designing using data like I2C use them if it goes off the board. Otherwise use them on digital inputs from pushbuttons or switches as a common protection plus pullup device. If you are using a analogue input run it through both switches in series and simply do not connect Vcc so it acts as a low pass input filter as well as an overvoltage protection.
