When I was young Stereo equipment (amps, speakers and so on) were worthwhile projects, but now everything is so inexpensive that it costs more to buy a kit than the finished product.

One vital source of insperation is a very full junk box. Let everybody know that if ever anything electronics-related is on the way to the rubbish send it past you first. Speakers, christmas lights, sensors, radios, wall plug packs, motors from CD players, RC cars... The good think about junk from the junk box is that when you let the smoke out of bits without it costing you.

Just stay away from anything that could put you at risk from mains power.

However, the internet is an endless source of ideas:

http://mobileelectron.files.wordpress.com/2011/06/electronics-for-you-projects-and-ideas-2000.pdf

Actaully all of the Talking Electronics site is pretty cool for ideas - http://www.talkingelectronics.com/te_interactive_index.html

Gaze not into the abyss, lest you become recognized as an abyss domain expert, and they expect you keep gazing into the damn thing.

Get yourself a speaker, some BJTs, some PWM chips and all sorts of other general chips from logic chips to phase locked loops, and start messing around with them and your oscilliscope, try make some funky synth or somthing, i can spend hours messing around with a few function generator chips with VCF control in them and an oscilliscope, making strange waveforms.

After you build your FM radio, you can try an aircraft radio receiver, if you live close to an airport :-+

Quote
Don't like your little brother's TV channel selection? Hate the volume your wife sets the stereo at? Want to just annoy someone? This circuit does all that and more by jamming most IR remote signals. The circuit releases a flood of pulsing IR light that confuses the reciever by corrupting the data stream.

And a great collection of projects and learning pages:
