Shift sensor output voltage up/down

Hello!
I interfaced a sensor badly on my board and I have to fix it : (
I have an output voltage from a current sensor. It's output swing is as follows:

VCC/2 for no current,
VCC for full current.

How to shift those voltages to an differential ADC input, where I would like to get 0V for no current and 2,048V for full current? I want to discard anything below VCC/2.  VCC = 5V. I can source a couple hundred mA from output (it's op-amp buffered).
Any suggestions for doing it in a simple way and not loosing those important mV above VCC/2?

Is a solution using an op-amp as here on page 25:

a good choice?
