SPI bus packet structure

Does anyone know of a resource for learning the SPI protocol?  I would like to decode the MOSI and MISO lines by hand.

I couldn't find any resources on how packets are structured or if there are common commands, such as the packet start and stop.

SPI is much simpler than that, there is no universal commands, packet structure or such. SPI simply gets a few bits from here to there. What those bits mean is application specific. See http://en.wikipedia.org/wiki/Serial_Peripheral_Interface_Bus.
