Would this switch be compatible with my circuit?

Just a quick one here: would this switch be compatible with this circuit? I ask only because there seem to be different sorts of 3pdt switches (the type I need), and it isn't clear whether this has 2 or 3 positions.

Yes.  From below:
SW318  Mini Toggle Switch 3PDT  On – On

AKA:  3 Pole, Dual Throw, 2 position  (One position is On, the other position is On on the other throw)
 
If it had three positions it would be either 3P3T (a centre throw) or 3PDT On - Off - On (no real centre throw, just neither throws connected).

Heh, i was going to suggest for your application using a rocker switch instead, as they are harder to bump and add a smaller, nicer profile to whatever you're putting them on; only problem is they're as rare as unicorn shit in 3pdt.
