Electrons do have mass. That is correct.
To erase a cell you place charge on the floating gate .... ( an empty flash reads all ones. A logic one indicates a gate charge. Gate is charged with electrons. ).

The flash cell has the same number of electrons either way.  The gate is a capacitor.  To charge it up you move electrons from one side to the other, the total number stays the same.  There may be some mass due to the modified energy density (m=E / c^2 and all that), but not due to the electron mass.
