Hi all,
I've had a good look but I can't see if there is any way to cusomise the UI colour and font.
On other programs and Windows I guess this would be a theme.
Is there any way? I would like to go for something less stressful on the eyes.

Not that I know of. You can change the background color on the schematic sheet but it only stays for that sheet and not even for other sheets in the project.
If you don't want the white sheet background of the PCB window then you can turn that off and it will be a gray color.

You can also slightly control how the menu ribbon appears. Double left-click on one of the menu titles (Home, or View or Project, etc) to toggle the options. Option 1 is to keep the ribbon open, option 2 is to hide it unless you pick a menu and then the ribbon will drop down and then auto-hide. Hiding can help increase screen space a little.
