Electrolytic, ceramic, tantalum, poly-whatevs, supercaps....... When do you use which type?

So my suggestion is for a beginners guide video on what type of capacitor do you use for which application(s). If you're designing a circuit, does it matter (much?). And also, quite important, can you whack in another type without releasing the magic smoke? Especially with elco's vs non-polarity versions. E.g. when a circuit calls for an electrolytic 10 uF 16V, can you safely replace it with a jellybean SMD 10uF 16V? Or vice versa. Does it have an impact on functioning of the circuit as long as you keep within the maximum ratings?
