reverse engineering DOS hardware interfaces

Hi.
I am trying to get some more flexibility out of a pair of CRTUs.

I know the ISA address space and ports used by the software to communicate to the hardware.
Anybody knows of a software package that allows to intercept and possibly record the IO operations.

could be a dos software or alternatively a windows one that let me run the dos app in a sort of VM.

Failing that, the only solution I see is that to use a logic analyser to record the bus traffic.

Additionally, anybody knows what are the scsi like interfaces in the R&S CRTU and PU units.
They are meant to interconnect these devices but I do not understand the use case.
