I recently bought one of these from Ebay...

DDS Signal Generator

I haven't tested the outputs on it yet (I won't have a scope for a few days) but, apart from taking 20-30 seconds to boot up, it takes about 7-8 seconds to fully display the next menu item. Is there a way I can speed it up?

Regarding speed up make sure its using 8Mhz xtal external oscillator, as seen in above pic of PCB, sometime then only use slower internal oscillator.
