I was going to look into making a new Atari 5200 controller as the original does not provide a self centering analog joystick. I've been looking at digikey, newark, mouser for a 500K pot joystick, but I can only find up to 100K with the 10Ks being most common and least expensive. Anyway to adapt this small pot size, to something larger, like the original 500K so it can interface properly to the Atari 5200 console?

Do a google search for "Atari 5200 controller" ,you`ll find plenty of hacks and mods.

most of the hacks and mods are digital joysticks. I'm looking to use a self centering analog joystick, but trying to find a 500k ohm 2 axis joystick is impossible. Hence I was thinking there could be a way to adapt 10k to do the job. But perhaps not.

do you mean similar to this one : http://learn.parallax.com/KickStart/27800 (http://learn.parallax.com/KickStart/27800)
EDIT : read this (5 pages) - http://atariage.com/forums/topic/206027-custom-5200-controller/ (http://atariage.com/forums/topic/206027-custom-5200-controller/)

500kohm as that is what the original used and the electronics inside the Atari 5200 expect that.
Yes something like pictured.
So far I'm thinking to use a self centering analog joystick, connect it to a micro controller to read in the analog value and then have the micro controller program a digital Potentiometer. I know Microchip and Analog Devices make these. But I'm trying to find a 500Kohm digital Potentiometer or see if there are other ways to do this.
I know there are circuits to have a digital stick fake the Atari 5200 out, but they are either on or off and I'm looking to do something more.
