Class A amp simulation vs reality - why the big difference?

Bonjour a tous:
For my   recreation of a 1942 WII   top secret speech  encryptor, with a dynamiv mic preamp, we had 2. stages of tube/valve/ampoule triodes, 6SL7.

We just built it from the 1953 RCA Vacuum Tube manual.

With a VOM, scope and a few resistance boxes, we  adjustd the plate and cathode reisitors to optimize. Works great!
