Oldschool soviet cooking mixer speed changer

Hello,
I have an old soviet union cooking mixer, it's working great, but it has 0, 1, 2 speed modes. I want it to have it's speed regulated via simple potentiometer from 0 to max gradualy. Can I do that, how to connect it and what resistance it should have? 
 

0, 1, 2 speed changer it has that V - KD 202 K Diode as noted in schematic


schematic given in manual, but I barely can read russian

Electric circuit elements:

C1,C2,C3,C4 - capacitors of type KT3-11 (ceramic pipe), no value given
L1,L2 - inductors 30uH 1.2A
R -metal film thermostable resistors 0.5W, no value given
V - diode KD202K 280V 5A
M - motor
S - switch
X - power cord

Most of the parts are for EMI suppression, the speed limiter is diode (cuts one half of AC sine wave).

You can use a simple triac-based dimmer to control speed of this motor. Throw away everything apart from motor and C1 (which is very likely to be mounted  directly on it).
Such dimmers are used in filament lamps dimming and in mains-powered drills
Google "triac dimmer".
Some implications:
- it might be tricky to fit a dimmer into the existing case (of cause, you can put a dimmer outside the mixer, but it will be weird :)
- don't fiddle with mains if you don't have enough experience. It can be very dangerous.

I do appreciate the love to some old ex-Soviet appliances, but can't understand this :-/  (the quality is usually very poor)
Why not to buy a normal mixer with proper speed control ?

thank you. I guess this is the answer. I saw triac dimmer implementation on youtube and that's exactly what I want  ;D

Why not to buy a normal mixer with proper speed control ?
Why he would need to throw away all parts including EMI suppression? I would throw away only diode and switch and put there dimmer instead.

Dead variable speed drill will have a speed controller optimised for an universal motor in it is a small compact package that likely will fit in the space of the old switch assembly. Remove the reversing switch ( it clips off the top easily) leaves you with a 2 wire speed controller that simply replaces the switch. They generally have a variable push along with a small control to give you some preset max speeds. Free with an old drill in the recycling centre.
