I love soldering and putting together small electronic devices but can never find any kits for anything fun/actually useful. There's always like electronic dice or decision makers but I'd like to find something much more involved. Anybody seen any kits or anything for protects that look both fun and not just super simple like 555 timer circuits and the like? Also if I had to say my skill level it would be between beginner and novice, I can solder circuits all day long with no problems and I love following a set of instructions as long as the end result is something fun.

Worth getting an amateur radio license. A whole world of stuff opens up then for kits that actually do stuff:

https://www.qrp-labs.com/ (worth looking at the clock and GPS kit from them - no license required and will give you a GPS setting clock with location awareness and all sorts!)

Then there's the motherlode of all kits ever made:

eBay is full of things like this: https://www.ebay.com/itm/XR2206-1Hz-1MHz-Function-Signal-Generator-Sine-Square-Triangle-Wave-Output-kits/331976478823 and https://www.ebay.com/itm/DSO138-2-4-TFT-Digital-Oscilloscope-Kit-DIY-Parts-1Msps-Probe-STM32/113225238864

Don't know how to estimate the fun of this though.

Just winding the handful of coils on a QCX was annoying enough for me :o
