Could someone explain me what are these gold plated circular pads and what is theis purpose?

Test points. Presumably for automated testing after assembly, since they're unlabeled. Only humans need labels.

The automated testing requires a unique Gerber file with the Test Points in order to access these?

You can also make your own test jig to contact those pads for programming and testing.
