Hi, I'm a newb and since this is my first post I would like to talk about newbish things like...is Electrical and Electronic Engineering just about placing math where you need it on a circuit board to achieve desired results? Furthermore, if this is true then what will I have to know in order to work on products that are similar to one another?

Yes Electrical and Electronics Engineering is widely related to mathematics. as an Electronics student In university you are involved completely to math. You have to analysis the different circuits by math. most of the times you must have a good view about physics too.
Regarding your second question, what about so called "instrumentation"?
