I also recommend that you learn to use LTspice.    You can try things quite quickly.

Basic amplifier configurations, oscillators, filters. Most of it's based on the 741. It gives pretty good explanations and waveforms. He recommends stripboard but I think a lot could be done with a breadboard, especially if you stick to a 741.
