Which order would you prefer, and why?
(1) +V, -V, Gnd
or
(2) +V, Gnd, -V
The voltages will never be more than +/-15.
(2) is more intuitive to me, but Pomona makes a
3-pin banana plug
that has ground on the end.

There isn't a hard and fast rule on that. I've seen it done both ways.
There's also:
3) V+,V-,GND arranged in a triangle so that a 2-prong banana plug will go in any two of the three terminals, depending on what you need.
