In the Mcmaster link you sent, use the "Odor Removal" type as that has activated carbon in it, and it is what you want to trap the fumes.
Also, aquarium activated carbon also works, if the granules are small enough. Or there is activated carbon pieces for external and internal water filters that work.
Heck, you can use wood charcoal if you feel like grinding it yourself.
As for MERV, don't know. According to wikipedia, MERV of 6 falls into the "Mold, spores, dust mite debris, cat and dog dander, hair spray, fabric protector, dusting aids, pudding mix" part.
Minium Efficiency Reporting ValuesThe fact that you are already sucking the fumes away through activated carbon, I don't think you need to worry too much about the MERV, especially if the filter you use isn't very porous. Most activated carbon does a VERY GOOD job removing fumes, chemicals, smells, you name it, it can handle it.
