Reflow oven for dual sided boards?

So I've seen a whack of videos on hacking up an oven to be a reflow oven.

How would someone do a two sided board? The 1st side is easy since the bottom side will lie flat.

What do commercial ovens do? Do they hold a panel on the edges for the second side so the first is untouched? Does something like this exist in the hobbyist space?

Commercial PCB panels usually have edge rails. They are used to hold and transport panel during whole assembly process.
