I want to control a 240v 8A AC watre pump motor with a relay. My research suggests I use a MOV to protect the relay contacts. I can't figure out which MOV to use.

Very little energy is required, compared to the energy a MOV can handle. A 7mm dia. THT, or 2820 size SMT chip, will do. Maybe even a 1206 or 1806, if they make one in that voltage.
