Using ESP8266 with Google Home

I have a Google Home Mini, and I would like to use this: www.ebay.com.au/itm/ESP8266-ESP-01S-Serial-WIFI-Wireless-Transceiver-Module-Send-Receive-AP-STA/232741403454 in combination with maybe a DHT11 to measure the temperature outside. I want to know whether this is possible, to configure the ESP8266 to appear to the Google Home as a temperature sensor (or another device, I'm kind of doing this as a learning exercise). My aim is to be able to ask the Mini, "What is the temperature outside", and it would tell me, getting the measurement from the sensor.

While I'm here, what is the difference between a NodeMCU board and an ESP8266? Also, what's the difference between the ESP8266 board I've linked above, and this ESP8266? www.ebay.com.au/itm/Wireless-module-NodeMcu-v3-v2-ESP32-D1MINI-Lua-WIFI-development-board-WL/233208928513. This one says ESP32 in the title, but it looks physically different to the more expensive ESP32... Also, I'm assuming that everything I can do with the ESP8266, I can do with the ESP32?
