The piezo actuators also work as sensors. So if connected right, the pizos should show a voltage in response to the mechanical force on the tip. This works really nice with the piezo discs from beepers - can be used for small experiments.
Chances are good to see the response the other way around: e.g. scope to the contact and some variable force to the tip.
I would expect the piezos to extend / contract in the longitudinal direction.
