Yeah why not if you have time.
Because the new SMF version has only the buggy editor we just tested.
Does it?
The plugin I installed was a paid third party plugin.

No expert here, I've installed SMF long time ago and only played with it for a week or so. That's how I remember. After upgrade the WYSIWYG editor became the default and it was not possible to revert to the previous (previous == like the EEVblog editor from the last years).
If you want and if of any help, I can try to install again a SMF2.0 on a Raspberry Pi, just like I did back then, then put it online and upgrade it to the latest 2.1.xx version to double check how the upgrade behaves.
My kind advice would be to test the latest SMF on some other place than on this production EEVblog forum, for just in case. Also seen this in the release notes, old plugins might need to be reinstalled/reconfigured or become incompatible:
If you are currently using any older version of SMF (including SMF 1.x, SMF 2.0.x, or one of the SMF 2.1 Betas or RCs), you can upgrade directly to 2.1.3 from whichever version you are currently using by using the "Large Upgrade" package from the Download page. Be aware that using this upgrade method will require you to reinstall any customizations that you have added to your forum, so if you are running SMF 2.1.0 or higher, it is recommended that you apply the successive patches instead of using the Large Upgrade.

No idea if any of the bugs fixed by v2.1 are now a problem for EEVblog. Usually I push for don't fix what is not broken. I wouldn't dare to apply the upgrade on the production forum without testing the upgrade on a copy first. V2.1.3 is only a couple of months old, so it might have unknown bugs. Either way, I wish the best for the forum and for you, too.
Happy New 2023 Year, and a big thank you for keeping the EEVblog up and running, and for inspiring so many others to pursue electronics.
