Conejo con caracoles (Rabbit with snails) is a popular dish in Spain. My Grandmother use to make it in special family reunions, delicious!
Weirdest thing I've eaten (at least weird to me) is bees in Japan on a business trip. The guys at Toshiba took us to what they considered the best restaurant in the area.
But in Spain we use to eat Angulas (baby eels) but now they are pretty pricey

All kinds of birds from hunts (you had to be carefull not to eat the buckshot). All kind of wild mushrooms picked by my uncle who knew which ones were poisonous and which ones not. Seafood all kinds since my home town was a fisherman town.
Since I've been in the States, I try everything Venison, bison, austrich, etc, and lucky me I live in Chicago where you can find food from Anywhere.
Edit: because Tim below reminded me of it, love Morcilla (blood sausage) and of course liver and onions.
My favorite food, duck confit with fries cooked on the duck fat, and piping hot lamb chops prepared with cumin.
