Your eyes feel different focused at infinity (more relaxed), but also the movement of your head from side to side doesn't change the view (parallax effect). A collimated simulator redirects the light so that the imaginary image comes from a direction consistent with infinitely distant objects. In this case they use a concave mirror and a convex screen to collimate the images, and multiple projectors blended together to get 180° coverage.
