I'll probably get some crap for this, but I find
Shango066's channel very entertaining. The focus is primarily on getting old tube televisions, radios and hifi systems that have been sitting out in the weather for decades running well enough to watch or listen (as opposed to restoration). He does this with a bare minimum of equipment, and often tests capacitors by running an audio signal through them and judging their health by the frequency filtering listening to the amplified signal.
Will you learn electronic theory? No. Will you be entertained? Yes
That said, I did pick up a few things watching him work on transistorized radios.
