How do you keep track of your open source projects?

As the name of the post suggests, how do you keep track of the progress of your own open source hardware projects? Also, how to write the documentation that goes with it?
I am figuring out ways to keep track of my SBC projects. Hence the questions.

I refuse to use AD's LTspice or any other "free" software whose license agreement prohibits benchmarking it (which implies it's really bad) or publicly disclosing the existence of the agreement. Fortunately, I haven't agreed to that one, and those terms are public already.
