Its kind of hard to tell and although I didnt have a good read into it, there was no obvious information standing out..
I dont think there are that many universes involved but as hes got video going i'm guessing its got artnet if hes up to date, or midi and some media server sofware such as resolume, arkaos or screen monkey.
The main thing is there is a LOT of prep time involved here.. some wysiwyg or capture polar software mockup of the rig connected to the lighting desk and running through it with time code step by step.... and thats not involving making up the fixtures etc.
I hate christmas, but the guy really makes a good show of it.

I have a mixture of conventional DMX (RS485) and DMX over IP (E1.31) in my display this year. Only 600 channels used though.
Some of the more hardcore people have dozens of DMX universes in their displays.
