So who makes the turns on the ground, like out from and onto the taxiways? Couldn't see any movement among any of the 3 that would indicate this. (I thought it was the guy in front at first.)

The guy in the left seat appears to be using differential braking.  Watch his feet as he depresses the top of the rudder pedals.
Lots and lots of VTVM's and Triplett analog multimeters
