Ain't no body got time fo dat!
My tangled mess (with a lot fewer cables) always atarts neat, but as soon as I need to add or remove something it turns to crap.

Most of the places I'we seen have similar nice tidy cable  layout termination to patch panels (permanent side).

I'ts the other side (patch panels to switches) that is messy... ^-^

Are those cables going into a punch down block?

Also, was that all done by people? (or a machine)? How long did it take? Do you know?

Where I used to work, if you couldn't do that kind of work, you would soon be looking for another job. Standard fare and not only Cat cable but coaxial as well.

I'm not saying that it's beyond my abilities, just that I think it takes a lot of time and the major problem is when you need to add/remove/replace a cable, everything falls apart and "temporary" solutions tend to become permanent.
At my work I do quite a bit of wiring, too. On one occasion we had a neatly arranged bunch of about 200 0,14 mm^2 (~AWG 26) individual wires and it was fine for a year or two, until we needed to rearrange and troubleshoot some stuff. It's been about three years since we finished that, and the wires are still a mess.

On another occasion we disassembled and rebuilt an entire section (with again 100 or so wires). Before disassembly, each wire was taught and just the right length. I labeled each wire before disconnecting it so I can reattach to its proper position later on, but a good deal of them did not fit properly any longer. I had to trim some and splice others (just a few centimeters, but enough so they can't be connected).  :-//
I did a decent job on that one, I think, but it took days.

Hooks that can be opened to hold cables are good. Then you can replace/redo them as need be.

It looks like there is nothing plugged into the other side of those patch panels yet. So, a brand new installation. Give them a few months, the back may start looking a bit entropic too.

I notice there don't seem to be any labels on the cables. When they actually start using this, what will they do if some of the cables turn out to go to the wrong punch-downs?

That is one of the most perfect cable bundles I have seen.

The bundles are in the same alignment when they change in the SAME direction.

Only one problem: you are not supposed to use ty-raps on ethernet cabling because that will push the pairs too close to eachother causing signal degradation. So although looking very neat it isn't technically perfect.
There are small lies, big lies and then there is what is on the screen of your oscilloscope.

A couple of years ago at work I spoke to a BT engineer and he told me they were not allowed to use tie wraps anymore for certain cables and they were issued with velco.
