Soldering? You could have separate through hole and surface mount events.

Troubleshooting competition, everyone is given a piece of  equipment that has been purposely modified to fail in the same place and you have to track down the problem :D

I would watch a mobo flinging contest like the discus throw.

I would also watch a timed tear down contest for a photocopier, or a mainframe (all tubes of course)- disassemble completely, put back together, turn it on.

The medals would be a pcb of some award winning 555 circuit with traces in gold, silver and bronze.

There is a Skills Olympics that includes electronic assembly, as well as things like resturant service, painting & decorating etc.
Youtube channel:Taking wierd stuff apart. Very apart.
Mike's Electric Stuff: High voltage, vintage electronics etc.
Day Job: Mostly LEDs

StarCraft is considered the national "sport" of Korea. I suppose when you think about it, the Olympics is all about stressing physical activity to the max, and the brain is the most important muscle we have... let's keep this post PG-13 :)
