I've got several YT channels that I like that are Microcontroller related.

Sciguy14 (Jeremy Blum) - That's what got me interested in Arduino. It's more of a beginner guide to the language but pretty good because it takes you through LEDs, Servos, Pir sensors, ultra sonic sensors.
ChikenParmi aka Jaidyn Edwards - Microcontroller and robot related
Derek Molloy - He's an electronics instructor at Dublin City University. He has a lot of stuff on the BeagleBone, Arduino and Raspberry Pi. A lot of it focuses on embedded Linux. (He sounds a lot like Roy from IT Crowd)
HumanHardDrive - General electronics, Arduino programming, AVR-C (Atmel Studio) programming
Patrick Hood-Daniel - Lots of AVR stuff. He gets into the pins, what they do, how you map things to them, bit shifting etc.
Oh and not microcontroller related but Afrotechmods is still one of my all time favorites. Very well explained guides on what electrical components do. He doesn't seem to be making any more videos though, but I do see him on this forum from time to time.
Oh yeah, anything by Collin Cunningham. He's worked for Make and now works for Adafruit but he's done some of his own videos as well. He seems like he might be a bit eccentric in real life but he's really into analog electronics and stuff that makes sounds.
