I made These Peanut Butter and Almond Powder Cookies are super soft, luxurious, and full of peanut butter goodness! They are gluten free and can also be made with my suggested easy vegan modifications.
If you're looking for a super soft, delicious, and gluten-free peanut butter cookie, you've come to the right place!. Mix this cookie dough and crisscross these delicious cookies with a fork while waiting for them to come out of the oven, and coat them with dark chocolate.

Ingredients:
- 150 g Almond flour (1 + 1/2 Cup) -
280g Peanut butter ( 1/2 Cup + 1 Tbsp )
- 150g Maple syrup ( 1/2 Cup )

Instructions:
1. In a Container, put 150 g Almond flour (1 + 1/2 Cup)
2. Add 280g Peanut butter ( 1/2 Cup + 1 Tbsp )
3. Add 150g Maple syrup ( 1/2 Cup )
4. Mix until combined
5. Form balls
6. Using a fork lightly press each cookie 2x per cookie in criss-cross pattern
7. Bake in preheated oven at 180°C-356 °F for 10 to 15 minutes
8. Dip half of the biscuit in chocolate and garnish with pistachios or almonds

I thought this might be a lovely diabetic cookie recipe until I got to the maple syrup !

I presume that's not just for sweetening but helps bind the cookie too. Any ideas what I might use instead ? An egg, perhaps (as I don't have any problem with eggs)
