Mushroom Pithivier

Didn't notice there was a cooking section. Got lots to add to this  :-DD

Serves 4. Replace meat on your typical British roast dinner with it. Have made this about 4 times. Recipe adapted from something I found.

Ingredients
* 2 tbsp olive oil
* 1/2 onion finely chopped
* 1 clove garlic
* 400g mushrooms
* 150ml white wine
* 1 tsp tomato puree
* 1 tsp dijon mustard
* 1 tbsp fresh sage
* 1 tbsp fresh thyme
* 2 tbsp creme fraiche
* salt and pepper
* puff pastry 425g all butter - Jus roll stuff is fine. Don't get the gluten free one by accident as it turns into concrete.
* 1 egg beaten

Method
* saute onion, garlic in olive oil for 5 minutes
* wipe mushrooms and cut into big slices
* Add mushrooms to pan and heat until liquid has evaporated
* add wine, water, tomato puree and mustard
* bring to boil and reduce liquid to a couple of table spoons
* Add sage, thyme and creme fraiche and bring to boil to coat the mushrooms.
* Season with salt, pepper and allow to cool
* Preheat oven to 200oC
* Divide the pastry into two.
* roll one piece onto 9x9 inch square
* cut out 4 circles 4 inches in diameter
* cut out 4 circles 4.5 inches in diameter
* divide the filling and place on the 4 smaller circles leaving an edge
* wet edge with a little water and crimp into pockets with the 4.5 inch pastry on top, making sure no air bubbles are left
* mark criss cross pattern on top with blunt knife, egg wash and put in the fridge for 10 minutes
* cook in oven for 20 minutes.

Notes / serve
* 4 portions
* Can half everything easily for two
* Keeps in fridge well after being made and cooked
* Reheat for 2 minutes in microwave and then crisp up for 2-3 mins in oven.

I found this post by searching the word "crimp" via the general forum search, haha. And I am glad I did because this looks amazing and I am going to try and make it!
