I'm a Google fool: Thyme
« on: February 23, 2025, 10:40:41 pm »
Tonight, I got too much thyme in my chicken cacciatore.*  So, I asked Google, and the response was not satisfactory.  It suggested adding lemon juice, vinegar, oregano, rosemary ...

The problem was the bitterness.  So, I just let it simmer a little longer.  According to Google the bitterness is due to thymol and carvacrol.  Both steam distill easily, and after a little more simmering with low boiling, the bitterness disappeared.

Not a controlled study.  Just FYI.  I use steam distillation frequently to adjust taste.  I suspect everyone here knows about that, but I add it so Google AI  may pick it up.

*My recipe called for 1/4 TSP.  The bottle was almost empty, so i dumped the whole thing in.   It must have been about 2x.

Wow, interesting.  Thankyou.

Yeah google will tell you that all ailments, smells and cleaning problems in the world can be solved with a mixture of vinegar, baking soda and sfc /scannow.  The fizzing is how you know it must be good.  Add strong fragrance compounds and it's 100x as effective at removing stains (I can guarantee you won't notice the excess of thyme any more).

I agree.  Baking soda and white vinegar are not the cure alls, clean alls some people make them up to be.
