Recipe collection: Spice Mixes
« on: January 29, 2021, 11:53:45 pm »
While cooking I noticed that there are some spices that are common to many dishes of some local cuisines.
So I decided to create some spice mixes for various dishes which I would like to share.
Maybe you have simmilar mixes for your favourit dishes as well? If so I would love if you could share them here as well, so we could make some sort of spice mix recipe collection :)

My contributions:

Indian inspired all-spice mix
Works very well with many indian style dishes, most of the time you just have to add eg. some chilli powder to your taste and are more or set for your recipe.

Ingredients
•   2 tbs garlic powder
•   2 tbs ginger powder
•   3 ts Garam Masala
•   2 ts cumin
•   1 ts tumeric
•   2 ts cayenne pepper
•   1 ts hot chilli powder (adjust to taste)

"Jamaican Jerk" inspired Spice Mix
A sweet and slightly spicy spice mix that fits many jamaican dishes.

Ingredients
•   5 tbs Brown sugar
•   3 tbs Onion powder
•   3 tbs Garlic powder
•   3 tbs Ginger powder
•   2 tbs Salt, iodine free
•   1 tbs chili Flakes
•   1 tbs Cayenne pepper powder stuff
•   1 tbs Bellpepper Powder (the sweet one)
•   1 tbs Bellpepper Powder (the spicy one)
•   1 tbs Black Pepper
•   1 tbs Cumin
•   0.5 tbs.... erm.... that brown powder you put onto milk rice, together with sugar. Cinnamon! yes, cinnamon.
•   0.5 tbs Nutmeg

Ysjoelfirs Shroomify Spice Mix
A great mix for people that like mushrooms. Fits also very well to venison and beef, especially on the BBQ as a rub.

Ingredients
•   5 tbs Dried, Ground Mixed Mushrooms
•   2 tbs Black Pepper
•   1 tbs Salt
•   1 tbs Vegetable Stock powder, salt free (if using powder with salt don't add any additional!)
•   0.5 tbs Bellpepper powder (the spicy one)
•   0.5 tbs Dried Thyme, ground to a powder
•   0.5 tbs Fenugreek Powder
•   0.5 tbs Dried Lovage, ground to a powder

Traditional home-made Garam Masala

(Makes about 1.25 cups of spice mix.)

5 or 6 pieces of cinnamon stick (about 2.5cm / 1 inch each)
1/2 cup whole black cardamom
1/2 cup whole black peppercorns
1/4 cup whole cloves
1/4 cup whole cumin seed
1/4 cup whole coriander seeds

1. Preheat oven to 200°C. Combine all the ingredients and place them in a baking dish. Roast the spices in the oven for 20-30 minutes, stirring frequently.

2. Once roasted, discard the outside shell of the cardamom pods, retaining the small seeds within. Grind the spice mixture for a few minutes at high speed, ensuring everything is completely ground. The ground mixture will keep most of it's flavour for about three months if stored in a container with a tight-fitting lid. Alternatively, you could also just grind what you need at the time using a small spice grinder.

my all-time favorite salad mix: (I don’t know the exact measures, I put everything in sight)
smoked salt
red pepper
black pepper
some sugar (1/4 of teaspoon)
dried garlic
lemon or lime juice
olive oil.
great for both salad and marinade.

and my favorite marinade recipe (mostly for chicken):
fresh garlic (2 cloves)
a tablespoon of honey
2 tablespoons of soy sauce
2 teaspoons of Dijon mustard
a teaspoon of ground paprik
and 2 tablespoons of lime juice
in the microwave for 5-10 seconds so that the honey melts a little, and then mix the chicken with the marinade and let stand for at least an hour :)

I like this thread, although I am not that great with spice blends, I usually just lob in various herbs and spices and hope for the best  :-\

1. Preheat oven to 200°C. Combine all the ingredients and place them in a baking dish. Roast the spices in the oven for 20-30 minutes, stirring frequently.

I feel this roasting step is a bit redundant, because you roast garam masala (to some degree) while cooking meals anyway. You end up double roasting it, and potentially burning it. Of course, all depends on what stage you add the spice.

Absolutely fantastic on any kind of smoke pork and butt.  Also great on barbecued or roasted chicken.

For smoked pork, put it on as thick as you can.

Measurements in parts by volume.

Black Pepper    2
Garlic Powder    2
Salt          1 1/2
Cayenne      1/2
Cumin      1/4
