Tortellini with Marinara sauce

Made this recently. I make several different kinds of pasta sauces. This was a simple marinara. I want it relatively thick and with only a small amount of texture.

Tomato puree + a smaller amount of tomato sauce.
I use a food chopper on green Peppers, onion and garlic. In that order, they get sauteed and olive oil is added before each. Then the sauce. Spices are basil, oregano, salt and pepper. After the sauce has simmered for a while, I taste it and adjust it for spices. If it is too tart or 'sour' - canned tomato anything is a bit of a gamble,  I will add a teaspoon of sugar (not too much, just a bit for balance).

These tortellini were stuffed with cheese, so no Parmesan on top.

Add some hot pepper to taste and is done.
