Charmaster Going from Prototype to pre-production

Good morning fellow EEVBlogers, I hope your having a wonderful day. I am just finishing up my first item I want to mass produce. I have developed a charcoal grill controller, it's a PID controller, and it is IOT device. Anyways here is my question to people that might know. I am getting ready to ramp up, first I am using OSHPark to produce 3 of my pre-production proof boards. I just want to make sure that they are 100% what I need before I commit to producing my first production run.  Next I want to do a production run with a chinese manufacturer for cost. Right now I'm paying 20.00 for a 4 layer 70mmx70mm board which is insane. They are beautiful boards, I have never had a defective board as I shouldn't at 20 bucks a copy. However with a Chinese board OneHungLo (PCBWay) I can get these boards produced at 2.90 per copy. I am nervous however that the quality will suffer. Should I try them out with 10 boards first before ordering my 100 unit production run? I don't want to make more than 100 units for my first production run. Additionaly I have found a captive market to sell these to, and I am going to try and sell the first 100 units directly to people that are on the BBQ competition circuit. This product's source code I will make open sourced, because I would rather drive the standard.  Thanks guys for your time answering this question.
