As I know of, he was just trying to prove a point, how ridiculous some projects these days are. It worked well in the end though, yes, it's ridiculous to make a 'smart potato', but to some, so are other smart objects and devices that don't actually make any difference but are rather smart for the sake of it.

Gotta love the campaign's stretch goals too:
$60,000 - The smart potato will be able to produce weather forecasts
$90,000 - The smart potato will have its own blockchain
$120,000 - The potatoes will be able to communicate with each other over a meshed-potatoes network
