Is there an easy way to tell DipTrace to just unpour all the pours?
I can't work with everything poured, but it's tedious to pour/unpour repeatedly, especially if there are several.

There is a panel with tabs on the right side of the screen. Select the Objects tab and make sure Displaying and Selection is showing in the drop down box. Uncheck Copper Pours. This will hide all pours on the board.
This works a bit better than unpouring as you don't see the associated ratlines. Setting the pour state to Unpoured will show the ratlines where the pour connections used to be.

Fantastic, gentlemen! Thank you both. Hiding rather than unpour/repour makes more sense while editing!

FWIW, you can also hide the ratlines for a given net....ground, for example. Just right click on something that's part of the net, and click "Hide Ratlines".
