Technical wise it will work. It is proven technology, cool warm air and capture the condensed water. The only thing you can debunk is the sanity of it working in, what might be, a dry climate. Never been to Tunisia so I don't know from own experience if it is humid or not. And the other thing is if it will produce enough water to make it viable.

A similar technique can be used to desalinate salty water.
