i have one of those.

it's just a motherboard in a case. there's no power supply , no ram , no cpu , no harddisk or other means of storage. the bios flash chip has been removed . it has no radio's , and all the ports have been soldered shut.
good luck hacking that.

It all depends on how important the data stored on that server is. If the data is VERY IMPORTANT (like a technology that allows cheap, safe containment of anti matter), then your data won't be safe ANYWHERE in the world.

If your data is important, but not as important as above, the agencies won't bother getting it using conventional hacking. They will just persuade the people maintaining those servers to give it nicely, and if they don't, they might resort to adequate "brute force attack" (no, not the kind that is done using algorighms )

Saying IOT should make you run because that implies that it's extremely vunerable, has not even the concept of security, and is also a useless pile o' crap!

Real IOT (not the wankery bluetooth or wifi LAN controlled crap that people slap "IOT" on when it has no internet connection) is also almost certainly laced with nasty spyware.
