I'm not sure if you are still looking for a fast manufacturer for flex PCBs, but I would recommend Clarydon - https://www.clarydon.com/
They are a UK-based PCB manufacturer and they also have another branch for PCB assembly called Kasdon - https://www.kasdonpcb.com/

No not really. But it would still be helpful to know... I mean, if a company that can make boards faster than about 8 business days even exists. IME this usually means 2 weeks minimum. Adding your actual experience regarding turn around time to the post might be nice.
