does anybody know what software was used to create these circuit diagrams?

I believe those diagrams are drawn, but you can make similar pictures with Fritzing
http://fritzing.org/home/
For more professional circuits you can use DipTrace, Eagle, KiCad etc.

Could be a software - LochMaster - by a German company named Abacom, it looks pretty close, have a look:

Of course there are, as TheAmmoniacal wrote, other and better schematic drawing software to choose, but still it is an option if you work with small, quick built circuits.

I hate drawings like that, they're so much harder to read than a regular schematic. It's probably easier for a 10 year old to breadboard a circuit that way but after the first or second project one really ought to learn to read a schematic.
